Our Story
In the beginning, we were baking cakes for friends and family out of our tiny 600 sq ft apartment in Mesta Park. We knew we wanted to open a bakery, but we had little experience making pastries—and no starting capital. We both worked in the restaurant industry, and knew how difficult it is to start, and operate a business. We also knew at the time (2018) Oklahoma City had no true artisan bakery. Thus, adding inspiration to bring something special to our city. After many trials and (mostly) errors, we created our sourdough croissant recipe. We began selling at local farmers markets, hoping to gain experience, feedback, and a little funding for our dream. After 6 years of saving, purchasing equipment, and a few pennies from mom, we finally found a quaint location in the heart of Downtown Oklahoma City.
Today, we’re thrilled to bake delicious and nutritious goods every week. Our passion is to serve people, and we strive to bring quality, creativity, and excellence to everything we do. We would not be here without the love and support of customers from the Paseo Farmers Market, Scissortail Farmers Market, Norman Farmers Market, and customers across the state.

Our Products
Our croissants are a 3 day process. Detrephe (dough) is made on Day 1 and Beurrage (Butter) is laminated on Day 2. One Day 3, we bake, fill, and garnish the pastries. We use non-GMO organic flour, European butter, locally sourced dairy, and locally sourced products when available.
Jack’s smile was as big as the sun and had eyes that twinkled like stars.
The Name
Our bakery is named after our precious nephew Jack O’Neal Bryen (2013-2020). He was a Champion. A tiny solder who fought every day to be happy and share his joy with those around him. He was the boy with a smile as big as the sun and eyes that twinkled like the stars. He was our nephew and we loved him.
We named our bakery after him in hope that everyday we can honor him by serving this community with heart and with excellence.
